FFF FIT-MAS WITH A TURKEY TWIST
When it comes to Christmas dins, it’s doesn’t all have to be sins. There are plenty of healthy alternative ideas out there, but if you’re asking our opinion we’ve got the best of the bunch!
‘Turkey ballotine served with mixed veg and quinoa’
Sounds fancy right? Well it is… and fit and fresh!
Ingredients
(One serving)
■ 150g turkey mince
■ 150g quinoa (cooked)
■ 10g onion (diced)
■ 1 courgette
■ 5g pomegranate seeds
■ 15g corn niblets
■ 15g red pepper (diced)
■ 15g yellow pepper (diced)
■ 20g fresh peas
■ 15g dried cherries
■ pinch of thyme
■ pinch of parsley
■ 1 tsp English mustard
Method
■ Start by dicing the onion and roughly chopping the thyme and parsley, then blend the three together with turkey mince. Transfer the mix to a at surface and spread it out into a rectangular shape, 1cm thick. Roll into a short roll from there, roughly 4cm thick.
■ Use a mandolin to shave the courgette into ribbons, then season with salt. Wrap the courgette ribbons around the roll and place on a large piece of cling lm. Carefully roll this up tightly, tying the ends up so it’s waterproof.
■ Steam the roll in a steamer or other similar device for 12 to 15 minutes, so the roll cooks through. In the meantime, mix all the other ingredients together in a large bowl with the cooked quinoa, and serve on a large plate or bowl. Sprinkle cherries on the top.
■ Take the roll out of the steamer and cut into three pieces. Remove cling film, serve rolls on the quinoa mix. Merry Christmas!
