MATCHA & SESAME-CRUSTED SALMON WITH ASPARAGUS, BROCCOLI, WHITE CABBAGE & AVOCADO DRESSING
Ingredients
- 100g salmon
- ¼ cup of hazelnuts
- 1 tsp white sesame seeds
- ½ tsp cumin powder
- ½ tsp matcha powder
- 40g broccoli
- 5 asparagus tips
- 30g white cabbage
- ¼ avocado
- 1bsp olive oil
- 50g black wild rice
Method
- Preheat the oven to 180 degrees
- Crush the hazelnuts in a bowl and add sesame seeds, cumin powder and salt and pepper seasoning
- Layer the mixture on top of the salmon fillet
- Bake for 15-20 minutes
- Steam the broccoli, cabbage and asparagus tips for 6-8 minutes
- Bring the rice to the boil and turn off the heat, cover and let stand until fluffy
- Mix the avocado and olive oil together in a blender until smooth
- Pour over the salmon and vegetables as a sauce
- Serve with rice
