One of our favorite artisan distillers, St. George Spirits, has been on our mind this week after news of changes, popped up in our inboxes. The welcome reminder + the return of sunshine & fresh-cut grass in the air, made us immediately crave some sort of fresh, herbal, citrusy cocktail. And just like that, we were certain St. George Agricole Rum had to be a part of it. What makes St. George Spirits such a stand-out distiller is their unwavering focus on capturing the true flavors and aromas of whatever source material they’re working with—be it pears, cherries, or in the case of this rum, fresh sugarcane. True to this vision, their Agricole is a colossal, grassy rum that is a clear expression of California sugarcane, and strikingly different from most rums in its allegiance to the ripe, vegetal properties of just-harvested cane. Agricole Rum comes with this warning: not everyone’s going to love it. But for those who crave intrigue and a little mystery in your cocktail, there’s nothing like it. 1 1/2 oz St. George California Agricole Rum 1 oz pineapple juice 1/2 oz Velvet Falernum 1/4 oz St. Elizabeth Allspice Dram 1 egg white |
Add all ingredients except garnish to a cocktail shaker and shake without ice. Open the shaker, add ice, and shake again. Strain into a chilled coupe glass and garnish with a spanked mint leaf. |
