Carefully selected by legendary manager and alcohol alchemist Giuliano Morandin, who is humbly named among the world’s best bartenders, Old Particular Caol Ila whiskey was distilled exclusively for the Dorchester.

Distilled, matured, and bottled in Scotland by Douglas Laing & co., who have been working their whiskey magic since 1948, ‘Caol Ila is a rare cask of single malt scotch whiskey with a distinct flavor that encapsulates the authentic terroir of Islay’s rugged coast. Like sea air and peat fires, this whiskey is soot and ash with a beachy quality on the nose, and a peppery tongue and notes of cinnamon, brown sugar and rye spiciness. Intense and rich with malted barley and floral touches, the finish is long lasting and fades to dark smoky flavors. How should you drink it? The Whiskey experts at the Dorchester recommend adding a dash of water to enhance the flavors and allow the drinker to fully appreciate the complex aromas. They suggest using the water that made the whiskey or about as close as you can get – Uisge Source water from the Ardilistry Spring in Islay.
