There’s a bit of fun going on at the Bar at Edinburgh’s classic Balmoral Hotel. You know how Michelin-starred restaurants offer multi-course “tasting menus” to show off the virtuoso skills of the chef? Well the Balmoral has applied that concept to drinks: a seasonal cocktail tasting menu enjoyed over a leisurely couple of hours. The amuse bouche from the autumn menu is made from Zubrowka bison grass vodka set with apple juice and orange blossom water and served with Merlet crème de poire. The tiny crunchy apple cubes added perfect seasonal taste and texture. Winter is welcomed with a first course called the Sacopenapa: a mix of cachaça, lemongrass, and lime topped with ginger beer. Crème de mure and Prosecco make an appearance in the second act before clearing the stage for the Tijuana Take Me Home: Tequila Ocho Blanco shaken with apricot brandy, grapefruit juice, and a dash of gomme. This is strictly grown-up fun.
