The Libertine With Balcones Baby Blue Whisky

Have you ever returned home from a wild night out with your friends, decided you needed a midnight snack, and tipsy-toed your way to the fridge, only to whip up the most random, yet glorious creation ever existed? Well the Libertine cocktail is kind of like that but better because not only does it involve the mixture of delicious ingredients like oranges, lemons, rosemary, and Balcones Baby Blue Whisky, but also 1 egg white. Yep. An egg. Creating the most divine, yet unexpected results, the Libertine is a fun way of letting the world know you aren’t afraid to try anything.

Libertine

2 oz Baby Blue


1.75 oz lemon


0.25 oz orange


1oz rosemary simple syrup (see syrups)


1 tsp maple


1 tsp orange marmalade


1 egg white


Garnish: Lemon Twist & Rosemary Sprig


Mix the juices, syrups, marmalade and egg white and shake with no ice until frothy. Add ice and baby blue, then shake until cold. Strain and serve.

Rosemary Simple Syrup: Ingredients – 300g water, 600g white sugar, 2 cups rosemary needles. Method -Bring the water to below the boil. Slowly stir in all the sugar until a syrup forms. Once the syrup is complete, turn off heat. Add the rosemary to the pot and cover. Let the mixture sit for 15min and then strain out the rosemary needles.
