MATCHA & SESAME-CRUSTED SALMON WITH ASPARAGUS, BROCCOLI, WHITE CABBAGE & AVOCADO DRESSING

Ingredients

  • 100g salmon
  • ¼ cup of hazelnuts
  • 1 tsp white sesame seeds
  • ½ tsp cumin powder
  • ½ tsp matcha powder
  • 40g broccoli
  • 5 asparagus tips
  • 30g white cabbage
  • ¼ avocado
  • 1bsp olive oil
  • 50g black wild rice

Method

  1. Preheat the oven to 180 degrees
  2. Crush the hazelnuts in a bowl and add sesame seeds, cumin powder and salt and pepper seasoning
  3. Layer the mixture on top of the salmon fillet
  4. Bake for 15-20 minutes
  5. Steam the broccoli, cabbage and asparagus tips for 6-8 minutes
  6. Bring the rice to the boil and turn off the heat, cover and let stand until fluffy
  7. Mix the avocado and olive oil together in a blender until smooth
  8. Pour over the salmon and vegetables as a sauce
  9. Serve with rice
