MISO PULLED CHICKEN RECIPE

‘Miso pulled chicken with bean shoots, beetroot, french beans & mange tout dressed with lime & honey’
Ingredients
- 100g chicken breast
- 1 tsp tamari sauce
- 1 tsp ginger
- 1 tsp star anise
- 1 tsp chopped spring onion
- ½ tsp honey
- 1 clove of garlic
- 1 tsp miso paste
- 20g bean shoots
- 40g cooked beetroot
- 40g mangetout
- 1 tsp fish sauce
- 1 tsp sesame seeds
- 1 tsp sesame oil
- 1 tsp honey
- 1 tsp lime juice
- 100g rice noodles
Method
- Preheat the oven to 200 degrees
- Mix together the tamari sauce, grated ginger, grated star anise, finely chopped spring onion, and honey
- Coat both sides of the chicken breast with the dressing
- place the chicken on a baking tray and bake for 10 minutes
- flip the chicken and bake for a further 15 minutes
Meanwhile
- Roast the beetroot for 40-50 minutes
- Steam the mangetout for 2-5 minutes
- Combine the leftover ingredients to make a honey and lime dressing (fish sauce, finely chopped garlic, miso paste, honey and lime)
- Bring the noodles to the boil and simmer for 8-10 minutes until soft
- Top it off by garnishing with bean sprouts and sesame seeds
